Sunday Pancakes


Whole Wheat Cran-pecan Pancakes

1 ½ cup whole wheat flour

1/3 cup quick oats

½ teaspoon Baking soda

¼ tsp baking powder

½ teaspoon salt

½ teaspoon cinnamon

½ teaspoon nutmeg

2 eggs

3 tablespoons Veg. oil or applesauce

½ cup dry Cranberries

1 1/2 cups Buttermilk (use milk w/1½ tblsp vinegar)

½ cup Pecans

Makes 6 servings.

Put flour, oats, salt, spices, baking soda & powder into bowl. Stir together. Then add eggs, oil, buttermilk, fruit and nuts. Mix well. Cook over medium heat. Serve warm with Maple Syrup. Freeze extras.
