Whole Wheat Cran-pecan Pancakes
1 ½ cup whole wheat flour | 1/3 cup quick oats |
½ teaspoon Baking soda | ¼ tsp baking powder |
½ teaspoon salt | ½ teaspoon cinnamon |
½ teaspoon nutmeg | 2 eggs |
3 tablespoons Veg. oil or applesauce | ½ cup dry Cranberries |
1 1/2 cups Buttermilk (use milk w/1½ tblsp vinegar) | ½ cup Pecans |
Makes 6 servings.
Put flour, oats, salt, spices, baking soda & powder into bowl. Stir together. Then add eggs, oil, buttermilk, fruit and nuts. Mix well. Cook over medium heat. Serve warm with Maple Syrup. Freeze extras.
